Donut Batter

  • 3 eggs
  • 1 tsp vanilla extract

  • 1/2 cup chopped dark chocolate
  • 2 tbsp heavy cream

Instructions

  1. Prepare the Dry and Wet Ingredients: In a large bowl, combine the flour, sugar, ground cinnamon, baking powder, and a pinch of salt. In a separate bowl, whisk together the eggs, milk, vanilla extract, and melted, cooled butter until fully incorporated.
  2. Create the Batter: Gradually add the dry ingredient mixture into the wet ingredients bowl while stirring to combine. Mix until the batter is smooth and pourable with no lumps.
  3. Bake the Donuts: Spoon or pipe the batter into a DIY donut tin. Place the tin in a preheated oven at 350°F (175°C) and bake for 20-25 minutes until the donuts turn a light golden color. Once baked, allow them to cool in the tin for 5 minutes before transferring onto a wire rack and carefully removing the tin foil.
  4. Prepare the Topping: While the donuts cool, melt 1/4 cup of butter in a small bowl. In another bowl, combine the granulated sugar and cinnamon for the churro topping and set aside.
  5. Make the Chocolate Ganache: Melt the chopped dark chocolate either in the microwave in short bursts or over a bain-marie (double boiler). Stir in the heavy cream until the mixture is smooth, shiny, and thick enough to coat the donuts.
  6. Assemble the Donuts: Brush each cooled donut with the melted butter, then roll it in the cinnamon sugar mixture so it is evenly coated on all sides. Finally, dip the top half of each donut into the chocolate ganache, allowing a generous coating. Let the chocolate set slightly before serving.
