Instructions

  1. Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Peel and cut the sweet potatoes into 1-inch cubes. Toss the cubes with olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, and pepper until evenly coated. Spread the sweet potatoes in a single layer on a baking sheet.   2. Make the Black Beans: While the sweet potatoes roast, heat olive oil in a medium saucepan over medium heat. Add chopped onion and sauté until translucent and soft, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant. Add the black beans, vegetable broth, chili powder, cumin, oregano, salt, and pepper. Stir to combine and bring to a simmer.
