Ingredients

Scale

Salmon Mixture

  • ¾ lb Coho Salmon, skin removed and cut into 1-inch pieces
  • 3 tablespoons Teriyaki Sauce or Japanese BBQ Sauce
  • ¼ teaspoon Kosher Salt

Seasoning

  • 1 tablespoon Brown Sugar
  • ¼ teaspoon Garlic Powder

Rice Base

  • 3 cups Cooked Sushi Rice

Toppings

  • 1 small Avocado, cubed
  • 3 tablespoons Spicy Mayo
  • 1 tablespoon Furikake
  • 2 tablespoons Crispy Fried Onion Bits
  • 2 tablespoons Scallions, finely diced

Instructions

  1. Prepare the Salmon: Carefully remove the skin from the salmon and cut it into 1-inch pieces. In a medium-sized bowl, combine the salmon pieces with teriyaki sauce and kosher salt. Mix gently to coat the salmon evenly and set aside to marinate.
  2. Build the Sushi Bake: In a small baking dish, spread the cooked sushi rice evenly and pat it down to create a flat surface. Layer the marinated teriyaki salmon pieces on top of the rice. Sprinkle the garlic powder and brown sugar evenly over the salmon layer to enhance caramelization during cooking.
  3. Broil: Preheat your oven’s broiler and place the baking dish on the top rack. Broil for about 6 minutes, or until the salmon begins to caramelize and develop a slightly crispy texture, watching carefully to prevent burning.
  4. Add Toppings: Remove the baking dish from the oven. Evenly distribute the cubed avocado over the salmon layer, drizzle the spicy mayo on top in a decorative pattern, then sprinkle the furikake seasoning, crispy fried onion bits, and diced scallions to add layers of flavor and texture.
  5. Serve: Serve the sushi bake immediately while hot. Scoop portions onto plates and enjoy the combination of warm salmon, creamy avocado, and crunchy toppings.

Notes

  • Coho salmon is recommended for its rich flavor, but other salmon varieties like Atlantic or Sockeye can also be used.
  • If you don’t have cooked sushi rice, short-grain rice cooked with rice vinegar, sugar, and salt can be substituted.
  • Adjust the amount of spicy mayo according to your spice preference.
  • Use a broiler-safe baking dish to avoid damage under high heat.
  • Leftovers can be refrigerated for up to 2 days but are best enjoyed fresh.
