Ingredients

Scale

Protein and Vegetables

  • 1 pound ground turkey
  • 1 cup broccoli, finely chopped
  • 2 large carrots, grated
  • 1/2 cup diced onion
  • 2 teaspoons minced garlic

Sauce

  • 1/2 cup low-sodium soy sauce
  • 1/4 cup water
  • 2 tablespoons red wine vinegar
  • 2 tablespoons brown sugar
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground ginger
  • 1 tablespoon cornstarch
  • 2 tablespoons warm water

Other

  • 4 cups cooked white or brown rice
  • 1 tablespoon vegetable oil

Instructions

  1. Prepare Teriyaki Sauce: In a mixing bowl, whisk together the soy sauce, 1/4 cup water, red wine vinegar, brown sugar, granulated sugar, minced garlic, ground ginger, cornstarch, and 2 tablespoons warm water until smooth and well combined to create the teriyaki sauce.
  2. Sauté Vegetables: Heat the vegetable oil in a non-stick skillet over medium heat. Add the diced onions and minced garlic first, cooking until fragrant, then add the finely chopped broccoli and grated carrots. Continue to sauté until the vegetables are tender and slightly softened.
  3. Cook Ground Turkey: Add the ground turkey to the skillet with the sautéed vegetables. Break it apart with a spatula and cook until the turkey is thoroughly browned and no longer pink.
  4. Simmer with Sauce: Pour the prepared teriyaki sauce over the cooked turkey and vegetables. Stir well to coat everything evenly, then let it simmer for about 5 minutes, allowing the sauce to thicken and meld with the ingredients.
  5. Serve: Spoon the teriyaki turkey mixture over the cooked rice. Garnish with sliced green onions if desired for added flavor and color, and serve hot.

Notes

  • Using low-sodium soy sauce helps control salt levels in the dish.
  • Can substitute white rice with brown rice for a higher fiber option.
  • Add green onions or sesame seeds as garnish for extra texture and flavor.
  • Adjust sugar quantities if you prefer a less sweet sauce.
  • Make sure to cook the turkey thoroughly to an internal temperature of 165°F (74°C) for food safety.
