Rice
- 2 cups cooked jasmine rice (preferably day-old)
Eggs
Vegetables
- 1/2 cup diced carrots
- 1/2 cup peas
- 1/4 cup chopped green onions
- 1/4 cup chopped onions
Sauce & Seasoning
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt to taste
- Freshly ground black pepper to taste
- Prepare the rice: Use 2 cups of cooked jasmine rice that is preferably refrigerated overnight to ensure it is dry and separated, which helps in frying without becoming mushy.
- Scramble the eggs: Heat a wok or large skillet over medium heat and add half the vegetable oil. Crack in the eggs and scramble them gently until just set, then remove from the pan and set aside.
- Cook the vegetables: Add the remaining oil to the wok and stir-fry the diced carrots, peas, onions, and green onions until they are tender but still crisp.
- Stir-fry the rice: Add the cooked rice to the wok with the vegetables. Stir and break apart any clumps, allowing the rice to heat through evenly.
- Combine all ingredients: Return the scrambled eggs to the wok with the rice and vegetables. Pour the soy sauce over the mixture and stir-fry everything together for 2-3 minutes to evenly distribute flavors.
- Season and serve: Taste the fried rice and adjust with salt and pepper as needed. Serve hot as a standalone meal or with additional side dishes.
Notes
- Using day-old rice prevents the fried rice from becoming soggy.
- You can customize the vegetables based on preference—bell peppers, corn, or bean sprouts are great additions.
- For added protein, consider adding cooked chicken, shrimp, or tofu.
- Use low-sodium soy sauce to reduce salt intake if desired.
- Ensure the wok or skillet is hot enough to achieve a good stir-fry texture.
